'I like to start by drinking it’ was my off-the-cuff reply to the question of how I approach wine. The more I have sat with that impromptu response however, the more comfortable I have become with it. Wine is a Dionysian pleasure - academic, sensorial and stirring. It can be deliciously complex - sitting at the intersection of place, culture, history, science and tradition - and yet wine is as simple and essential as kicking back to raise a glass with those who are close to us. And so drinking wine feels like the very best place to begin!
